Abstract:

PURPOSE: To obtain a new bacterium belonging to the genus Lactobacillus advantageously useful as a healthy food, sanitary food, etc., having high anti- mutagenicity on mutagen.
CONSTITUTION: The objective bacterium, Lactobacillus casei having anti- mutagenicity on both a base-substituted mutagen and a frame shift type mutagen and high intestine arrival. The bacterium (Lactobacillus casei) have the following mycological properties. 0.8% acidity of lactic acid is reached in a medium of skim milk at 37°C for 17 hours. Shape; 0.5-1.0×5-10μm bacillus; having no spore. Physiological properties. Lactic acid fermentation is homo type. Gram stain is positive. No catalase. 15-45°C growth temperature and 38°C growth optimum temperature.
