To provide a new maltose phosphorylase having optimum temperature overlapping with that of a trehalose phosphorylase to be combined therewith, the range of the optimum temperature being in a temperature region expectable of sterilizing effect, and temperature stability suitable for producing the trehalose and deactivable at a moderate temperature and to provide a method for utilizing the new maltose phosphorylase.
The new maltose phosphorylase has the optimum temperature and the temperature stability within the range of 50.0-58C and is deactivated by 90% through a heat treatment at 65C for 15 min. The method for producing the trehalose using the enzyme is provided.
