Abstract:

To obtain a yeast strain usable for producing a fermented food and drink containing isoamyl acetate and fatty acid ethyl esters useful as an aromatic ingredient in good balance at a high concentration and rich in flavor.

This new yeast is a Saccharomyces cerevisiae F-1 strain (FERM P-16357) which is a yeast belonging to the Saccharomyces cerevisiae and having the tolerance to 5',5',5'-trifluoro-DL-leucine and the productivity of isoamyl acetate and that of fatty acid esters at a high concentration.
