Abstract:

PROBLEM TO BE SOLVED: To obtain noodles capable of being a source of supply of a vegetable fiber, having reduced calorie and further good in noodle-making properties and texture.
SOLUTION: The noodles are produced by using a raw material containing a resistant-starch comprising ≥60 wt.% resistance starch (a hardly digested starch) and preferably a modified starch subjected to the processing for lowering a gelation-starting temperature, besides grain flour, and by using a conventional method. A starch obtained by subjecting a high amylose cornstarch and/or a derivative thereof to a moist heat treatment is preferably used as the starch containing the resistant-starch.
