NEW MATERIAL:An acyl ester of N-hydroxysuccinimide with a fatty acid.
EXAMPLE: Palmitic ester of N-hydroxysuccinimide.
USE: An acylating agent of a protein, e.g. soybean glycinin, with a fatty acid, which is an oleophilic electrophilic substance, capable of giving a formed bonded substance and an enzymic decomposition substance having a high degree of emulsifiability, and usable for the food industry.
PROCESS: N-hydroxysuccinimide is reacted with a fatty acid, e.g. palmitic, octanoic or decanoic acid, in a solvent, e.g. tetrahydrofuran, in the presence of dicyclohexylcarbodiimide, to give an ester of the N-hydroxysuccinimide with the fatty acid, which is then added to a glycinin solution to afford an acylated glycinin with the fatty acid (a novel substance). The resultant acylated glycinin with the fatty acid is then dissolved in a standard buffer solution and decomposed in the presence of pronase to afford an acylated peptide with the fatty acid (a novel substance).
