Abstract:
To provide an oil and fat composition having a whitener function, bringing excellent flavor when being added to food and drink, excellent in dispersibility and white turbidness, and endurable against distribution at normal temperature and preservation for a long period.SOLUTION: An oil and fat composition distributable at normal temperature, having a whiter function, and obtained by dispersing powdered oil made by drying an oil-in-water emulsified product in edible oil and fat having a rising melting point of 55°C or less. It is preferable that: a ratio of the powdered oil to the edible oil and fat is 85:15-30:70 (mass ratio); a content of oil and fat in the powdered oil is 30-80 mass%; diglycerol fatty acid ester is contained; oil and fat processed starch and/or starch sodium octenylsuccinate are/is contained; the oil and fat composition is pasty or fluid at 25°C; and the oil and fat composition is for an instant food.SELECTED DRAWING: None
