Abstract:

To obtain an oil-in-water emulsified composition for meat processed food imparting the meat processed food with excellent palate feeling having juicy feeling, suppressing flow of gravy when cooking and drip when freezing/thawing and improving yield.

This oil-in-water emulsified composition for the meat processed food comprises 5-60 wt.% of edible oil and fat, 0.1-8 wt.% of a milk material as a solid having ≥2 wt.% of phospholipids in the solid derived from milk, 0.1-3 wt.% of alginic acid and/or alginate, and calcium.
