PURPOSE: To obtain the title opened and dried horse mackerel seasoned, prevented in oxidation and having good taste and preservation, by exposing raw horse mackerel treated by opening the abdominal region and removing middle bone to warm air to dry the horse mackerel and then applying MISO (fermented soybean paste) to the total surface of the opened and dried horse mackerel.
CONSTITUTION: The aimed opened and dried horse mackerel obtained by opening the abdominal region, removing the internal organ and middle bone 1a, washing the mackerel with ice water, immersing the mackerel into ice water, then salt water and successively pure water and further exposing the mackerel to warm air to dry the mackerel and then sinking the dried horse mackerel body 1 into a vessel containing a liquid MISO 2 and forming a membrane of MISO 2 on the total surface of the horse mackerel and maintained in state of soft meat part.
