To provide completely natural pickles by producing a beautiful color without using a chemical coloring material relating to the pickles made from pickling materials such as a Chinese white radish or the like and the manufacture of the pickles.

These pickles are made by pickling the materials such as the Chinese white radish and the others in fluid containing at least turmeric components and the manufacture is provided with a process for roughly pickling the materials such as the Chinese white radish and the others by using salt or a salt solution, the process for pickling the roughly pickled materials in the fluid containing sugar components and removing the salt and the process for truly pickling the materials from which the salt is removed in the fluid for true pickling containing at least the turmetric components.
