To provide powdered black vinegar which maintains an original flavor of the black vinegar without excessively diluting a useful component of the powdered black vinegar, having low hygroscopicity, hardly being aggregated, and having excellent stability.
The powdered black vinegar contains a dried black vinegar and roasted rice powder, wherein the content of the roasted rice powder is 30 pts.wt. or more and 100 pts.wt. or less based on 100 pts.wt. of a solid content of the black vinegar. The powdered black vinegar is suitably produced by drying with heat after the roasted rice powder is added to a black vinegar concentration so that the roasted rice powder of 30 pts.wt. or more and 100 pts.wt. or less is added based on 100 pts.wt of the solid content of the black vinegar.
