Abstract:

PURPOSE: To provide a powdery composition containing a gelatinized cereal flour composed mainly of amylopectin and a water-soluble thickener powder, capable of keeping excellent moisture-proofing property during a long-term storage and instantaneously changeable to a rice cake food to form a clear and delicate pattern on the surface of the powder by pouring water on it.

CONSTITUTION: The objective powdery composition forming a rice cake dough simply by pouring water contains (A) ≥50wt.% of gelatinized cereal flour (having particle size of 60-200 mesh) composed mainly of amylopectin such as potato starch or waxy corn starch and (B) 10-30wt.% of powder of a water-soluble thickener (having particle size of finer than 200 mesh) such as guar gum, xanthan gum or pullulan.
