Abstract:

To provide a method for treating powdery food material where functions such as solubility are modified by a simple method so as to be widely utilized: and to provide powdery food material obtained by the method.

The method for treating powdery food material comprises treating powdery food material with overheated steam. The powdery food material changed in its characteristics is obtained by the method. A method for treating flavor-containing starch comprises impregnating starch with flavor liquid so as to contain flavor components, and treating the starch with overheated steam.
