Abstract:

PURPOSE: To provide a premix capable of suppressing the development of black spots on the surface of a cake and also capable of obtaining cake further improved in palate feeling, texture and taste, and to a obtain cake this premix.

CONSTITUTION: The premix (pref. for hot cake) characterized by containing sodium bicarbonate ≤80μm in means particle diameter. Another cake can be obtained by baking dough prepared by incorporating the premix with egg, cow milk, cream, water, or mixture of at least two of them.
