Abstract:

PURPOSE: To prepare concentrated extract of oyster having high concentration with improved fragrance and luster without causing a burnt smell, by concentrating an oyster soup to a low concentration once, drying it with an air current.

CONSTITUTION: An oyster soup collected from raw oysters is concentrated to ≤37.5° Blix concentration, and it is dried with an air current at 5W65°C with stirring. Consequently, concentrated extract of oyster having improved fragrance and luster, free from a burnt smell, having extremely high Blix concentration of 100% free from a burnt smell can be prepared. Since air current drying is used in this method, temperature is controlled easily, concentration time can be shortened, and fear of damaging commodity value is extremely small.
