Abstract:

PURPOSE: To provide a liquid food of soya milk, e.g. soya milk soup, etc. which can be served by heating without forming coagulum, by heating and homogenizing a liquid soya milk food composed mainly of soya milk, vegetables and salt- containing seasoning at a high temperature.

CONSTITUTION: A liquid soya milk food is prepared by using soya milk, vegetables and a salt-containing seasoning (e.g. salt, soy sauce, etc.) as the base. The food is heated at 105W155°C, and homogenized with a homogenizer, etc. simultaneously to or after the heat-treatment to obtain the objective liquid soya milk food (e.g. soya milk soup, soya milk stew, etc.). The ions of alkaline earth metals such as calcium, magnesium, etc. contained in the vegetables and the sodium ion and chlorine ion, etc. originated from the seasoning prevent the formation of coagulum in the liquid food in the case of heating before serving.
