Abstract:

PURPOSE: To obtain the subject spirit at a remarkably reduced fuel cost in shortened fermentation period without using a steaming operation by mixing crushed raw crop with water, adding a saccharase and yeast to the mixture, leaving at a prescribed temperature and using the obtained saccharified liquid as a raw material.

CONSTITUTION: A rice malt is prepared and fermented to form the primary MOROMI (unrefined fermentation product). In the secondary MOROMI preparation step, crushed or pulverized raw crop and water are mixed with each other, a saccharase and a yeast are added thereto and the mixture is left at 25-35°C to obtain a saccharified liquid. A mixture of the primary MOROMI and the saccharified liquid is fermented and distilled to obtain the objective spirits.
