PURPOSE: To continuously prepare a large amount of the subject food having the taste, palatability and appearance similar to those of natural SHIRASU (dried young sardine) in a short time by extruding a raw material in the form of a string and cutting the extrudate under a specific condition.
CONSTITUTION: A raw material containing a thermally solidifiable food as a main component is ground and mixed to obtain a finely divided mixed raw material. The material is extruded through a die 21 having a small nozzle 21a to form a string of the mixed raw material. The string is cut at a prescribed angle inclined by 90-180° relative to the transfer direction to obtain the objective food. In order to cut the string in the form of a SHIRASU, it is preferable to alternately change the cutting angle relative to the transfer direction to form the head and the tail of the SHIRASU.
