PURPOSE: To obtain a high-quality protein from pasture, by inoculating the pasture with yeast, squeezing the pasture, treating the juice with a reverse osmosis membrane, ultrafiltration membrane, etc., and concentrating the separated protein.
CONSTITUTION: Pasture reaped by a reaping machine is inoculated with yeast such as baker's yeast, beer yeast, wine yeast, etc. prior to the squeezing of the pasture, especially prior to the crushing process. The inoculation is carried out by scattering the powdery yeast or its aqueous suspension to the pasture under stirring and mixing. The inoculated pasture is crushed with a grass crusher, preferably screened by filtration with a screen, and sent to the squeezing process. The obtained juice is subjected to the membrane-separation treatment such as treatment with reverse osmosis membrane, ultrafiltration membrane, etc. to effect the concentration of the protein. The ultrafiltration membrane is the one having a critical fractionation molecular weight of ≥100,000.
