Abstract:
PURPOSE: To obtain a sunflower seed milk having improved lipid content based on proteins and free of green smell, by using defatted sunflower seed as the raw material.
CONSTITUTION: Partly defatted sunflower seed or sunflower seed essentially free of lipid is prepared by the defatting treatment comprising compression method, extraction method or their combination. The defatted sunflower oil is optionally added with sunflower oil and/or one or more vegetable oils other than sunflower oil, and emulsified by conventional method.
