PURPOSE: To obtain the titled substance having high nutritive value free from a bad flavor and an offensive smell, by treating flakes for extraction as a raw material for oil cake with an aqueous solution of ethanol so that they are defatted, making them into a mixture with a fixed water content, extruding it by an extruder under heating and pressure.
CONSTITUTION: When soybeans are used as a raw material, skin of the soybean is removed, the soybeans are rolled into flakes, and dried under heating or dried and made into the flakes, which are adjusted to 0.7W10wt% water content. These flakes for extraction are brought into contact with ≥90wt% aqueous solution of ethanol, fats and oils are extracted, to give defatted raw material of oil cake. The raw material is washed with water, blended with water, adjusted to 10W65wt% water content, and, if necessary, mixed with animal and vegetable protein, to give a mixture. The uniform mixture is extruded under pressure and heating, and, if necessary, cut, dried, ground, and used a subsidiary ingredient.
