PURPOSE: To obtain a food preservation agent having excellent preservation effect and balanced taste.

CONSTITUTION: The food preservation agent contains caprylic acid monoglyceride and/or capric acid monoglyceride in combination with glycine, sodium acetate, lysozyme and an organic acid and/or an organic acid alkali metal salt or contains caprylic acid monoglyceride and/or capric acid monoglyceride in combination with glycine, sodium acetate, lysozyme and a polymerized phosphoric acid salt.
