Abstract:

To effectively utilize bean curd lees which are recently disposed as a large amount of industrial wastes and to make a contribution to the solution of environmental problems.

The broth collected by boiling chicken bones, swine bones, etc., and water, mashed natto (fermented soybeans) and the bean curd lees steam cooked at a high temperature under pressurized are mingled with each other and the mixture is fermented. The bean curd lees and natto made in the manner described above and the method of utilizing the same are provided.
