Abstract:
PURPOSE: To obtain a novel dressing comprising a salad oil dispersed into a water phase of seasoning free from separation of oil water phase by adding carrageenan to water phase of dressing containing salt to form gel, then defloculating, adding a liquid oil and homogenizing.
CONSTITUTION: Water phase of dressing containing 2-10% salt is blended with preferably 0.5-0.75% carrageenan to form gel, which is defloculated by a homogenizer, etc., mixed with a liquid oil and homogenized to give the aimed dressing.
