To provide a process for producing dried persimmon using a treating process having sterilizing action and decay-preventing action as a substitute for sulfur-fumigation treatment and ozone treatment.

The objective process for the production of dried persimmon has a drying process for drying a skinned astringent persimmon. A water- treatment process for treating astringent persimmon with electrolyzed water is provided before the drying process or the peeling process of the astringent persimmon to prevent the generation of mold and putrefaction on a dried persimmon taking advantage of the sterilizing action or the washing action of the electrolyzed water.
