Abstract:
PROBLEM TO BE SOLVED: To provide a method for efficiently producing ethyl-α-D-glucoside in a high purity by using a microorganism having an alcohol fermenting ability and an enzymatic agent corresponding to a saccharide used as a substrate.
SOLUTION: This ethyl-α-D-glucoside is obtained by making an enzyme, e.g. α-glucosidase having an α-1,6-glucosyl transition activity, or the enzyme and an amylase agent act on saccharides, starch or its decomposed product in the co-presence of a microorganism, e.g. yeast for brewing having an alcohol fermenting ability.
