PURPOSE: To obtain the subject hardly decomposing by oxidation, having excellent preservability and good appearance, by passing bone part of fish prepared by laterally dividing the flesh along the backbone, grinding the bone part through rollers the ground bone and frying.
CONSTITUTION: The bone part obtained by laterally dividing the flesh along the backbone is passed through rollers, ground and made into a brittle state to be readily heated and to easily stick to coating. The ground bone is provided with coating and fried to give a readily edible fried product having crisp texture free from hardness of bone. After the bone part is cut into tiny pieces and passed through rollers, if the bone is dried and readily ground, the fried product has good taste by flavoring.
