Abstract:

PROBLEM TO BE SOLVED: To obtain high-quality fishes and shellfishes, crustacea or livestock meat foods scarcely causing pollution due to microorganisms and having a low fat and high protein content, high nutritive valve and soft palatability.
SOLUTION: Ethanol in an amount of 1.0-6.0 pts.wt. and an alkaline substance in an amount of 0.2-1.0 pt.wt. based on 100 pts.wt. fish meat or livestock meat is added to picked meat of fishes and shellfishes or crustacea or livestock meat and these components are ground under ≤100 Torr vacuum to prepare the objective ground meat.
