PURPOSE: To obtain a hearthy low calorie ham having uniform quality by injecting a pickle to which polydextrose being a water soluble vegetable fiber is added into a liverstock meat, and by using the treated meat as a raw material.
CONSTITUTION: 20-90 pts.wt. of a pckle to which 5-35% of polydextrose being a water soluble vegetable fiber is added is injected into 100wt.% of a livestock meat such as of pig and cow and then, as necessary, the meat is messaged to uniformly disperse the pickle. Then the meat is salted, and after subjecting the salted meat to smoking treatment or without carrying out smoking treatment, is boiled and cooled to readily provide the objective ham without increasing the viscosity of pickle. Furthermore, water insoluble vegetable fiber is preferably added to the pickle in addition to the polydextrose.
