Abstract:

PROBLEM TO BE SOLVED: To obtain a magnesium casein phosphopeptide preparation which has high Mg content and is useful in food products, feeds and medicines by treating casein phosphopeptide as a hydrolyzate of casein with a cationic ion- exchange resin to remove metallic ions followed by reaction with a Mg salt in an aqueous medium.
SOLUTION: Casein phosphopeptide prepared by hydrolysis of casein is brought into contact with a cationic ion-exchange resin to separate metallic ions from the casein phosphopeptide. Then, the metallic ion-free casein phosphopeptide is allowed to react with a magnesium salt, for example, magnesium oxide and/or magnesium carbonate and the like to introduce magnesium ions into the casein phosphopeptide whereby the objective magnesium-casein phosphopeptide preparation which has the weight ratio of 1-4N/P and 0.1-3Mg/P and is useful in food products, feeds or medicines.
