Abstract:
To provide a production method of a food product gustatory improver comprising not a concentrated cheese flavor but a fresh cheese flavor, or comprising, not a heated milk flavor but a fresh milk flavor, and a food product using the gustatory improver.SOLUTION: A food product gustatory improver includes, as main raw materials, lactose, milk protein, an oil component including milk fat, and a milk raw material mainly formed of a required amount of water. A total amount of the lactose and the milk protein out of a non-aqueous component other than the water, is 15 mass% or less of a gross. A ratio of an amount of the lactose to a total amount of the lactose and the milk protein is in a range of 0.1-0.5. With respect to the main raw material, there is used a composite enzyme group including lipase mainly.SELECTED DRAWING: None
