To provide a method for producing pan-fired tea or Tencha (non-rolled tea), rich in nutrient and aroma ingredients without requiring intuition and having high elution amount of catechin and physiologically active properties and an apparatus for producing the tea.
This method for producing pan-fired tea or Tencha (non-rolled tea) comprises successively carrying out each step of charge of fresh leaf carrying out deactivation of oxydase of fresh tea leaf in an airtight pan 1, heating of fresh leaf, discharge of volatile content from the fresh leaf and roasting and steaming of fresh leaf, discharge of packed steam and shaking and taking out of leaf. In the method, each step is controlled by using a timer according to pan temperature and then, the tea leaf is subjected to rolling drying or drying treatment without rolling. Discharge of volatile content is carried out by a timer and roasting and steaming are carried out for ≥90 sec and pan temperature of airtight pan is controlled to 250-400°C and tea temperature of tea leaf after finishing roasting is controlled to about 37°C in a rough rolling step of rough rolling, firing, rolling, medium rolling, finish rolling and fire-drying.
