Abstract:

PURPOSE: To obtain re-formed casein micelle useful for a coffee whitener as a substitute for fat by adding a soluble Ca ion source to a specified aq. reactive medium under conditions fit for the formation of casein micelle and further adding a soluble phosphate ion source. CONSTITUTION: An aq. reactive medium contg. a processed casein material not practically contg. micelle type casein, e.g. acid casein is adjusted to about pH 6.0, preferably 6.3-6.8 by adding NaOH and a soluble Ca salt (0.01-0.1 pt.wt. Ca ions) is added to the reactive medium under stirring. A soluble phosphate (0.01-0.2 pt.wt. phosphate ions) is then added to obtain the objective casein micelle.
