Abstract:

PROBLEM TO BE SOLVED: To simply obtain rice confectionery, such as arare [rice-cake cubes (pellets)] or rice cracker, without generating an oxidized smell even when stored for a long period, by defatting rice or its powder on the production of the rice confectionery.
SOLUTION: In a method for producing rice confectionery (for example, arare or rice cracker) from rice, a process for defatting the rice (for example, non-glutinous rice, glutinous rice or barley) or its powder preferably with a lower mol.wt. organic solvent (for example, diethyl ether or cyclohexane) is disposed. The defatting is preferably carried out before or after the rice is immersed in or mixed with water. The defatted rice is steamed and kneaded to prepare a rice cake, which is processed into the rice confectionery through a molding process, a drying process and a backing process. The extent of the defatting is preferable, when the degree of the fatty acid of the rice or its powder is ≤5 mg.KOH/100 g.
