Abstract:
PROBLEM TO BE SOLVED: To provide a production process for sausages that can readily apply a lactic acid solution to the surfaces of a plurality of sausages put in a smoking chamber all over and can uniformly heat the sausages treated with the lactic acid solution. SOLUTION: When a plurality of sausages produced by filling a hog intestine casing with kneaded meat are smoked simultaneously in a smoking chamber 14 to produce sausages, the whole faces of the hog intestine casings of individual sausages are sprayed with a lactic acid solution by means of spray nozzles 28. Then, the smoking chamber 14 is made into a humid-heat atmosphere with steam in the smoking chamber to thermally denature the casing surfaces. Further, the surfaces of the sausages are dried and smoked and subjected to boiling treatment as a sterilization with steam.
