Abstract:

PURPOSE: To brew a healthy sparkling wine having unique sweetness, mellowness and aromaticity by using an extract from a barley malt, a hop, sugar and a heated and pasted sweet potato as raw materials.
CONSTITUTION: A raw material containing (A) 3-15wt.% extract obtained from a barley malt, (B) 0-2wt.% hop, (C) 0-5wt.% sugar and (D) 5-40wt.% sweet potato prepared by roasting, steaming or boiling in water and pasting the sweet potato and the balance of water is boiled and the hop is then removed from the broth by filtration. The resultant broth is further cooled and the alcohol fermentation is carried out by using a yeast. The prepared fermentation liquor is then aged for a prescribed time.
