Abstract:

PURPOSE: To modify physical properties of starch grains and obtain treated starch grains useful as an industrial raw material for the starch and sugar industry by reacting the starch grains with a starch hydrolase.
CONSTITUTION: Starch grains are made to react with a starch hydrolase (α-amylase, glucoamylase, β-amylase, etc.). The hydrolytic ratio is usually 0.1-15.0% and the concentration of the starch grains is preferably 5-40%. The viscosity of the starch grains lightly hydrolyzed with the α-amylase is reduced so as to manifest a slight one and the starch grains are useful as a base, etc., for producing various foods.
