Abstract:

PURPOSE: To prevent water from separating while maintaining the texture essential to yoghurts by treating a raw material causing the water separation when formed into a product with a transglutaminase and then inoculating the resultant raw material with a lactic acid bacterial starter.
CONSTITUTION: A raw material for producing yoghurts is treated with a transglutaminase, then inoculated with a lactic acid bacterial starter and fermented. The transglutaminase in an amount of 0.01-100 units, preferably 0.1-50 units based on 1g milk protein is added thereto.
