Abstract:

To provide a method for the catalytic reduction of an oligosaccharide and provide a reduced oligosaccharide produced by the method.

The method for reducing a mixture of plural kinds of malto- oligosaccharides to essentially zero DE contains a step to determine the DP profile of the mixture of the plural malto-oligosaccharides at least different in DP value, a step to produce the malto-oligosaccharide mixture and a step to perform the catalytic hydrogenation of the malto-oligosaccharide mixture under a hydrogenation condition suitable for essentially keeping the DP profile of the mixture (the catalytic hydrogenation is carried out under a pressure of at least about 1,500 psi).
