Abstract:

PURPOSE: To effectively reduce the subject miscellaneous tastes and odors without substantially reducing red color peculiar to 'BENIKOJISEISYU' by treating 'BENIKOJISEISYU' with a specified ion-exchange resin.

CONSTITUTION: A commercial 'BENIKOJISEISYU' or a concentrated malt before concentration adjustment of components is passed through a column packed with a porous ion-exchange resin having carboxylic acids, imino- dicarboxylic acids, primary-tertiary amines or polyamines as exchangeable groups.
