Abstract:

PURPOSE: To obtain SHAO-MAI of black rice (scientific name: Oryza sativa L.) having high nutritive value, nourishing and tonifying action, various kinds of treating effects, etc., by wrapping a stuff containing boiled black rice and/or steamed black rice in a patty consisting essentially of wheat flour.

CONSTITUTION: A patty wrapping the above-mentioned black rice consists essentially of wheat flour and is obtained by sufficiently kneading wheat flour, allowing the kneaded material for about 1-3 hours and forming the material into a desired size and thickness by a rolling pin, etc. Then in order to prepare SHAO-MAI of black rice, for example, black rice washed with water is immersed in water for about 30-6 hours, then 100 pts.wt. black rice is blended with 50-120 pts.wt. water and treated by a method of boiling black rice in the same way as boiling common glutinous rice. The prepared stuff is placed on the patty consisting essentially of wheat flour and wrapped at the top part so that SHAO-MAI of black rice can be obtained. Then, in order to cook SHAO-MAI of black rice, the SHAO-MAI of black rice is treated by a method of steaming in a steamer for about 5-15 minutes or frying in an oil in the same manner as common SHAO-MAI.
