Abstract:
To obtain shavings a dried fish excellently usable for both broth and food.
The shavings of dried fish are obtained by shaving the dried fish in the direction of cutting crossing muscular fibers F of the dried fish at right angles so as to bring the thickness to 200 μm-500 μm, and baking the product by charcoal fire after shaving. The dried fish comprises either dried bonito or dried tuna.
