Abstract:
To provide a food product which is composed of a vegetable component and has functional characteristics close to a milk product, and a method for preparing the same.SOLUTION: A vegetable food product preferably contains crushed nuts in a puree form in addition of at least one vegetable fat, at least one starch supply source, at least one natural acid taste-imparting component, and water, does not contain an additive, and is similar to unpurified solid cheese. A preparation method includes: mixing a raw material by severe cutting; heat treating the raw material at a temperature of 75-90°C for 1-10 minutes under severe cutting; high-temperature charging a final product at a temperature exceeding 70°C into a package or an intermediate container; cooling the final product at 4-10°C; adding other vegetable, aromatic raw materials and/or a fermentation product thereto; extrusion molding/molding the cooled curd to form a final product; and coating the product for the visual or functional purpose.SELECTED DRAWING: None
