Abstract:

To provide soy sauce-like seasoning suitable not only for Japanese food but also for a western food and improving a masking effect to animal smell of meat and fishy smell of fish, grassy smell of vegetable, and milky smell of milk products.

The soy sauce-like seasoning improved in masking effect is obtained by increasing a concentration of isoamyl alcohol and/or β-phenethyl alcohol and further, increasing the concentration of citric acid.
