Abstract:

PURPOSE: To remove water on the intermediately finished steamed food in the high temperature steam in a finishing steam tank, by providing a primary or several intermediate steaming tanks and a final steaming tank in a body and making the steam inflowing into an intermediate steam tank low in temperature and further, making the steam inflowing into a final steaming tank high in temperature.

CONSTITUTION: A steaming apparatus A for food has steam circulation pipes 5, 5' with a plurality of fine holes 1a, 2a in intermediate finishing steam tanks 1, 2 provided in a body C respectively and also has a steam circulation pipe 10 ejecting high temperature steam into a final steam tank 3. High temperature steam of a steam generator 6 changes to low tem. steam through a decompression tank 7 and a water tank 8 and ejects from the fine holes 1a, 2a into the intermediate steam tanks 1, 2, and it ejects gradually from the fine holes 4a of a lid 4 to the outside. And the high tem. steam is fed directly to the final steam tank 3 to eject from the fine holes, and also ejects gradually from the fine holea 4b of the lid 4 to the outside. In this way, adhered water on the surface of the steamed food in the intermediate steam tanks 1, 2 is removed by the high tem. steam of the final finishing tank 3 and hence, a consistent steaming process can be carried out uniformly.
