Abstract:

PURPOSE: A sugar coating method in which an aqueous solution containing a specific amount of a sugar and surfactant is used as a coating solution, operable by the liquid sprinkling method and capable of being automated and giving tough and beautiful sugar-coated materials.

CONSTITUTION: A sugar coating method, in which an aqueous solution containing 40W65wt%, preferably 43W50wt% sugar, e.g. white sugar, glucose, sorbitol, lactose or mannitol, and 0.04W1.6wt%, preferably 0.1W0.5wt%, based on the aqueous solution, e.g. polyethylene glycol having 200W8,000molecular weight, is used as a coating solution and carried out by the liquid sprinkling method.

EFFECT: The sugar coating does not stick without requiring washing of pans during the operation and the sugar coating operation an be performed in a short time.
