Abstract:

PURPOSE: To provide a new odorless and stable derivative.
CONSTITUTION: A derivative of formula I or formula II (R is a saccharide residue) or its salt. For example, thiamin-α-glucoside. The compound of formula I or formula II, for example, is obtained by reacting a compound of formula III or formula IV with a saccharide (e.g. starch, maltase or sucrose) in the presence of a glycosyltransferase [e.g. cyclomaltodextrin glucanotransferase (EC-2,4,1,1,9) or dextrin dextranase (EC-2,4,1,2), etc.].
