Abstract:
To provide a thickener capable of adding thickness to a liquid composition containing much protein, such as cow milk and thick liquid food.
This thickener for protein-containing liquid food contains kappa carrageenan whose part of molecule is replaced with iota carrageenan. Furthermore, the thickener contains at least one kind selected from among xanthan gum, high-methoxyl pectin, Cyamoposis Gum, and metal salts.
