Abstract:
PURPOSE:To obtain low-alcohol SAKE (Japanese rice wine) having a light flavor and a left taste essential to the SAKE without any feeling of wateriness or heaviness even in the case of the low-alcohol SAKE having <=10% alcoholic strength. CONSTITUTION:This method for producing low-alcohol SAKE is to regulate the ratio of KOJI (malted rice) so as to account for 4-10% of raw material rice, supplementing the enzymic potency of the KOJI with an enzymic agent, charge the resultant raw material, thereby produce an unadulterated SAKE, as necessary, supply an acid and sugar thereto and dilute the resultant SAKE with water. The produced SAKE has 7-10% alcoholic strength, 0.3-0.8ml amino acid content, 0.6-1.5ml acid content and 3-6% extract content.
