PURPOSE: To obtain a new compound having endolytic digestion enzyme activity useful for reducing solution viscosity of polysaccharide.
CONSTITUTION: This compound has endolytic digestion enzyme activity against polysaccharides having subunit backbone structure of the formula (G1c is glucose; G1cA is glucuronic acid; X is Rha or Man; the reducing end of the polymer is toward the X residue of the backbone). The compound further has endolytic digestion action on polysaccharides such as gellan, gelrite, welan, S-198, S-7 and S-88. The compound is obtained by culturing biologically pure bacterium of the genus Bacillus proliferated in a culture medium containing polysaccharide having subunit backbone structure of the formula under submerged culture conditions in the presence of polysaccharide having a structure of the formula and separating the produced compound from fermentation culture product.
