Abstract:

PURPOSE: To prepare a jelly food by using globin separated from the waste blood generated from a carcass dressing factory, as a gelatinizing agent.

CONSTITUTION: Globin separated from the blood discharged from a carcass dressing factory, etc., preferably globin separated by carboxymethylcellulose process, is dissolved in water. The solution is if necessary mixed with sugar, glucose, fruit juice, spices, colorants, and other vegetable or animal foods to adjust the concentration of globin to 0.5W5% and the pH of the solution to 5W6, and is heated at ≥60°C.
